Alcohol content 15% vol., Total acidity 6 g / l residual sugar 4.5 g / l. Dry extract 30 g / l.
Vinification:
From grapes selected during the harvest and left to dry for ninety days. Fermentation in steel tanks for thirty days with daily pumping over of the must on the skins at a controlled temperature.
Refinement:
Thirty-six months in traditional 5-25 hl oak barrels and then six months in the bottle.
Features:
Red, deep garnet color. Very intense, characteristic aroma. Full, warm, velvety flavor, with hints of ripe fruit and undergrowth.
Food pairings:
Ideal with roasts, stews, braised meats, red meats and very aged cheeses. If aged, it can be tasted as a meditation wine. Serve in large glasses at a temperature of 18/20 ° C. It is advisable to uncork the bottle at least one hour before being served.
